Cherokee Casserole

Easy to make. One of my son's favorites.

Ingredients:

  • 1 lb. ground beef
  • 3/4 cup onion finely chopped
  • 1 tsp. salt
  • dash pepper
  • 1/8 tsp. garlic powder
  • 1/4 tsp. oregano (or more if you wish)
  • 1/2 bay leaf
  • 1 19 oz. can diced tomatoes
  • 1 can mushroom soup
  • 1 cup minute rice

Directions:

Preheat oven to 375 degree F. Brown beef with onion. Drain. Add seasonings. Add tomatoes, soup, and rice and bring to a boil. Reduce heat and simmer until rice is tender, stirring occasionally. Discard bay leaf. Spoon into 1 1/2 qt. casserole. Sprinkle with mozzarella. Place in oven until cheese melts. Freezes well, just reheat in microwave and add cheese before placing in oven.

15 Minutes Cooking Time
