Cooking Chicken Livers Without Splattering

Do you love to eat chicken livers, but hate the mess they make while cooking? Before cooking, poke the livers with a fork a few times, this will stop them from "Popping", and splattering oil all over the place.

I use my dutch oven to fry in, and there are few spatters brecause it is deeper than a frypan.

Two recipes to try-

Chicken livers with mushrooms

1 pound cleaned chicken livers
3 tbsp butter
2 c sliced fresh mushrooms
2 tbsp finely chopped onion
1 1/2 tbsp lemon juice
3/4 c beef broth or bouillion

melt butter in skillet (or dutch oven)
add mushrooms, and cook, stirring, over medium heat for about 2 minutes.
add livers, onion,lemon juice and broth.
Salt and pepper to raste.
tirn heat to high, and cook, stirring until livers are cooked through.
serve over rice.

Chicken liver pate'

1 pound cleaned chicken livers
1 onion minced
1 stick butter/margerine
1 tsp dry mustard
1/2 tsp pepper
salt to taste

melt butter in skillet(dutch oven).
saute' onion until soft.
stir in livers and salt and pepper.
cook until liver is done.
let cool, and put in blender and puree' until smooth. OR if you have a stick blender, blend until smooth right in the cooking pan. no need to cool first
pour into a covered dish, refrigerate until chilled.
makes a really good snack with crackers, or party rye bread. also makes a good sandwich with mustard.
