Wash lettuces thoroughly, dry and cut coarsely. Add shallots or onions, sugar, salt and pepper. Fry bacon until golden brown. Dice it and add to the lettuce. Into 2 Tbsp. hot bacon fat, add the vinegar and water and bring to a boil. Pour over lettuce, mix and serve.

Sounds great, but I have two suggestions. First, I'd stick with the shallots, and second, try this with fresh spinach.. Well okay, one more suggestion: I'd load that salad down with grean and black olives and a bunch of pickled peppers and some chopped tomato and so on. Anyway, excellent recipe and thanks for that!
