Remove the shower head first and run the water through the open pipe to be sure the noise is coming from the head and not the valve. If the noise goes away without the head on it, then disassemble the shower head and inspect the rubber o-rings and seals. If they are deteriorating, replace them or the whole shower head. Brush or chip off any deposits (they often look like small white or green grains of sand, and often get caught in the small holes.) Soak the shower head in CLR for 10 minutes or so and reassemble. If it still makes noise, I'm stumped.
