Indonesian Oxtail Soup

This is my wife's special recipe. Oxtail soup that you must try. I can't find any better than this. Hope you will like it too. Yummy!

Ingredients:

  • 500 grams oxtail (1 1/4 lbs.)
  • 5 stalks green onion, chopped
  • 200 grams (6.5 oz.) carrots, cut into round shape
  • 200 grams (6.5 oz.)potatoes, cut into cube shape
  • 2 pieces cloves
  • 1/4 tsp. nutmeg powder
  • 2 Tbsp. cooking oil
  • 8 pieces red onions
  • 1/2 tsp. pepper grains
  • 1/2 tsp. salt
Sides:
  • chips (or fried emping*)
  • fried onions
  • tomato slices

Editor's Note: Here is a wikipedia link about krupuk or shrimp crackers, emping is one type of these.

Directions:

Boil oxtail in 1000 ml of water until tender (4 1/4 cups). Saute spices, nutmeg, and cloves until fragrant. Put ingredients into the oxtail and water. Add green onion, potatoes and carrots. Cook until done and serve with one of the sides.

Serve it hot with crackers and chips.
