Can anyone tell me how to make sugared pecans? I'm guessing brown sugar and butter?

Happy, when you used mixed nuts, did you use canned ones from the grocery? If so, did you rinse off the salt or use them salted? Thanks.

Here's a great recipe for Candied Nuts that are almost identical to what vendors sell in NY city. I got it from Top Secret Recipes. It calls for almonds, peanuts, or cashews, but I've used pecans and walnuts also. I like it because it's easy, doesn't use too many ingredients, and doesn't have too many steps. Also, they've not too sweet.

2 Tblsp water
1/4 cup sugar
1 1/4 cups nuts--I've used up to 2 cups

Bring water and sugar to boil in saucepan over medium heat. Add nuts; stir constantly until water evaporates and sugar hardens on nuts (be careful not to cook too long, or sugar will burn). Pour out onto plate or bowl to cool.

This week I made this recipe from Dec 2002 O, The Oprah Magazine and it is delicious...not real spicy as you might imagine from its name.

Simple Spiced Pecans

1 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon cloves
2 cups pecan halves (I used mixed nuts)

Combine the first 5 ingredients in a glass bowl or measuring cup with 1/4 cup water and mix well. Cover the cup with waxed paper. Microwave on high for 4 minutes, stir well, and microwave another 2 minutes. Sitr again and microwave 2 1/2 minutes more.

Add nuts, stir well, and microwave 1 minute more. Spread the coated nuts on waxed paper and separate with a fork. Cool completely.

NOTE: I think it would be great using less sugar, but the first time I try a new recipe I try to follow it before changing it. Enjoy!

I have two recipes:

SUGARED PECANS
1 egg white
1 1/2 tsp water
1/2 C sugar
1/2 tsp salt
3/4 tsp cinnamon
1/2 lb pecan halves

Preheat oven to 300 degrees F. With fork, beat egg white and water. Combine salt, cinnamon, and sugar in a resealable plastic bag. Place pecans in egg mixture. Remove with slotted spoon to drain off extra moisture. Place in bag and shake. Spread onto a foil-lined pan and bake for 30 to45 minutes, stirring every 15 minutes. Can be frozen in an airtight container for up to 2 months.

CARMELIZED NUTS
2 TBS sugar
1/2 - 3/4 C shelled walnuts, broken into pieces (I'm sure you can use any nut.)

In saucepan, over medium heat, combine nuts, sprinkled with sugar. Cook (and stir) until sugar carmelizes to coat the nuts. Remove from heat and spread (and separate) nuts on waxed paper to cool. (You can probably use parchment paper instead of waxed paper.)
