Italian Chicken Simmer

Ingredients

  • 1 tbs. olive oil
  • 4 chicken leg quarters, skin removed
  • 1 can (14 1/2 oz) Italian style diced tomatoes,undrained
  • 1/3 cup tomato paste
  • 2 cups chopped red peppers
  • 1/4 cup Parmesan cheese
  • 1/2 cup shredded Italian style 5 blend cheese

Directions

Heat oil in skillet, cut apart leg quarters. Add to skillet, cook 10 minutes or until lightly browned on both sides. Add tomatoes with their liquid and tomato paste. Mix well. Stir in peppers and cover. Cook over medium-low heat. Simmer 20 minutes or until chicken is cooked through. Stirring occasionally. Remove from heat. Add Parmesan cheese. Sprinkle with shredded cheese. Let stand until cheese is melted.
