BJ's Pumpkin Crunch

Ingredients

  • 1 package Yellow cake mix
  • 1 can (15 oz.) Pumpkin
  • 1 can (12 oz.) Evaporated milk
  • 3 large Eggs
  • 1 1/2 cup sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 cup chopped nuts
  • 1 cup butter
  • whipped topping

Directions

Preheat oven to 350 degrees F, grease bottom of 9x13 inch pan. Combine pumpkin, evaporated milk, eggs, sugar, cinnamon and salt in a large bowl. Pour into a 9x13 inch pan. Sprinkle dry cake mix evenly over pumpkin mixture, top with pecans. Drizzle melted butter over pecans. Bake at 350 degrees F for 50 - 55 minutes, or until golden brown. Cool - serve chilled with whipped topping.

I loved this. I made it for Thanksgiving to take to a friends house. Used Splenda in it for the diabetics. Was great!
