Deeli's Caesar Salad

This recipe is so much yummier than the bottled/pre-packaged Caesar dressings. It's quick and easy to make and it's fresh.

Ingredients

  • 1 head Romaine lettuce, cut in bite size pieces*
  • 1/4 tsp. garlic paste
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 Tbsp. lemon juice
  • 1 tsp. Worcestershire sauce
  • 1/2 tsp. Dijon mustard
  • 1 Tbsp. mayonnaise
  • 1/3 cup extra virgin olive oil
  • 1 cup grated Parmesan cheese
  • Plain croutons, if desired
*I usually remove about four outer leaves for other uses because, okay I am picky, the outer leaves are not as tender and tasty as the inside leaves for such a scrumptious salad) ;-)

Directions

In a small bowl whisk garlic, salt, pepper, lemon juice, Worcestershire sauce, Dijon mustard and mayonnaise. Add olive oil and whisk well.

Place Romaine lettuce in a large bowl, add Parmesan cheese and croutons. Toss well. Pour dressing mixture over salad, toss and serve.

Most often I make a double batch of dressing and reserve half for a day or two or even three later. If you do this just be sure to allow refrigerated dressing to come to room temperature or microwave for about ten seconds because the olive oil solidifies when refrigerated.

Serves 4 to 6

Thank you so much. I was wishing for a "home-made" recipe for this dressing while I was grocery shopping today. I will make your recipe and have it with my meal in about an hour. Sounds yummy!
