Bear Paw Pancakes

This is such a fun pancake idea for kids (and grown-ups too).

  • 1 cup all-purpose flour
  • 1 Tbsp. granulated sugar
  • Ad
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 egg
  • 1 cup skim milk
  • 2 Tbsp. margarine
  • slivered almonds

Stir together the first five ingredients in a mixing bowl. Pour milk into a separate bowl; beat the egg and add it to the milk. Melt margarine and add it to the mixture. Add the milk mixture to the dry ingredients and stir until pancake batter is blended but still lumpy. Let stand about 10 minutes.

Spray cooking spray onto a hot griddle. For each bear paw pour a circle of batter about 3 inches in diameter. Add 4 small circles. a little bigger than a quarter, side by side along the upper edge of the circle. Decorate with slivered almonds to make claws. Cook the pancakes until little bubbles form and the underside is brown; flip and cook until edges are dry.

Freeze any leftovers and simply pop them in the toaster to reheat (without the almonds though - they may get caught in the toaster).
