Prize-Winner Icebox Cookies
- 1/2 cup margarine
- 1 cup sugar
- 2 tsp. vanilla
- 1 egg
- 1 3/4 cup flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup chopped nuts (pecan, black walnut, or hickory nuts are good)
Cream margarine and sugar. Add vanilla and unbeaten egg; blend. Sift dry ingredients; add nuts to them. Gradually add to sugar mixture. Blend well. Shape in long 2 inch rolls on waxed paper. Chill several hours in refrigerator. Slice 1/8-1/4 inch thick. Bake on ungreased cookie sheet in 375 degrees F oven until golden.
