Coconut Tarts

Tiny cups filled with coconut.

Ingredients:

  • 250 ml cake flour
  • 125 g butter
  • 60 ml apricot jam
  • 350 ml dessicated coconut
  • 125 ml condensed milk
  • Ad
  • 12.5 ml milk
  • 2.5 ml cardamom powder
  • glazed cherries for decoration

Directions:

Preheat oven to 180 degrees C (approx. 350 degrees F). Sift the dry ingredients. Rub in the butter and add milk till well blended. Make a soft dough and roll out. Cut in rounds.

Grease and line a muffin tray. Place each pastry into tray. Prick the base and place a little jam in each cup.

Combine coconut and cardamom powder in a bowl. Add condensed milk and mix. Fill cups with the mixture and place a cherry on top Bake for 15-20 minutes
