Eepoo is a simple dish to make and tastes so good with fresh coconut milk. Normally we eat Eepoo with raw fish, taro, and bananas. This is a sweet food because it is made with fresh, raw coconut and coconut water.

Yield: 8 servings
2 cups fresh coconut water (The water is recovered when we break the coconuts apart)
1 cup fresh, shredded coconut
2 cups flour
3 Tbsp sugar
1/2 tsp salt
12-14 green banana leaves or other large leaves
Put the coconut water in a mixing bowl.
Add the shredded coconut to a clean cloth. Wrap the cloth tight at the top.
Dip the cloth in the bowl of coconut water. You want to absorb as much of the water you can into the cloth.
Wring the cloth to squeeze all the water and coconut milk into the bowl. Your water with be a white milky color when done.
Add the sugar and salt to the coconut water milk. Mix well so the sugar is dissolved in the water.
Add ½ of the flour to the coconut water mixture. Use your hands to start mixing the flour with the water.
Once mixed, add the rest of the flour to the mixture.
Last add your coconut to the mixture and mix well.
Prepare your leaves. Wash the leaves and remove the center stem.
If you are using leaves youll need to place two leaves on top of each other. The stems should be facing the opposite sides.
Place your batter in the middle of the two leaves. You want it to be about 2 to 3 inches wide by 8 to 10 inches long.
Fold both sides of the leaves overlapping in the middle. This will cover the dough in the middle.
Take both ends of the leaves and come to the middle of your package. Tie the leaves in a knot.
In a large cooking pot on the stove boil your water. Once the water is boiling, add the wrapped packages to the water.
Test with a toothpick to see when they are cooked. Normally this takes around 10 minutes to cook the Eepoo.
Remove from the stove and drain the water.
Unwrap the packages and place on a serving platter or bowl.
Serve with fresh coconut milk, raw fish, and rice.
