Turkey Cutlets with Orange Sauce

Ingredients

  • 1 cup orange juice
  • 1 tbsp. dry vermouth
  • 1 garlic clove, crushed
  • Freshly ground pepper
  • 6 turkey breast-cutlets
  • 1/2 cup orange marmalade
Garnish:
  • 1 (11 oz.) can mandarin-orange sections, drained.

Directions

Preheat oven to 350 degrees F . Remove cover from dish, and spoon some marmalade on top of each turkey cutlet.

To make the marinade use a small bowl, combine orange juice, vermouth, garlic and pepper. Place turkey in a single layer in a glass 13X9 inch baking dish, and pour marinade over turkey. Cover and refrigerate several hours or overnight.

Bake, uncovered, 30 minutes or until turkey is tender, basting occasionally with marinade.

Place turkey on a serving platter. Strain juices into small pitcher or gravy boat; serve separately. Garnish turkey with orange sections.
