A uniquely Texas style sandwich that is served at a Drive In theater. It's called the Chihuahua and seems to be a great way to use up corn tortillas and chili. This came from the AAA magazine, but you can Google it and come up with more info.
Ingredients
- 2 crispy fried corn tortillas
- chili
- shredded cabbage
- pimento cheese spread
- chopped onions
Directions
Spread the pimento cheese on one side of a tortilla, put everything else between the tortillas, eat it over a plate!

Then we put our special chili on one of them, and onions, if you like onions. Then we take raw cabbage and grate it and put it on there. Then we take our special pimento cheese and spread it on the other tortilla. Then we put the tortillas together. And we put a jalapeno pepper in the sack with it."
