- 2 cooked chicken breasts - sliced
- 1 bunch spring onions
- 1 green pepper
- 125 ml oil (about 1/2 cup)
- 125 ml (about 1/2 cup) chillie bite mix
- 2 Tbsp. flour
- 2 tsp. baking powder
- 1 tin creamed sweetcorn
- 2 green chillies chopped finely
- Handful dhania (cilantro)
Mix all of the above together. Beat together 3 eggs and half a cup milk and allow to stand for 5 minutes. Add to dry ingredients. Bake at 180 degrees cup for 30 - 40 minutes. Serve with a green salad with a yogurt dressing. Delicious!

Editors Note: The chillie bite mix appears to be a common Indian snack. Look at ethnic stores that specialize in cuisine from India. It may be spelled slightly differently (Chili, chile, etc.) or known as Bhajia Mix.
