Use it in a gazpacho recipe. Just put the green salad left overs in a blender add it to the recipe.

A couple of weeks ago, I made a spaghetti salad, that we quickly grew tired of. I ended up serving it over a lettuce salad, topping it off with croutons & another kind of dressing. It went over so well, we've had it a couple of times.
