Golden Potato Casserole
- 6 medium potatoes
- 1/2 cup butter
- 2 cup shredded cheddar cheese
- 2 cup sour cream
- 1/3 cup chopped green onions and tops
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. butter
Boil potatoes in skin. Peel and grate. Combine 1/2 cup butter and cheese. Stir until almost melted; chill. Blend in sour cream, onions, salt and pepper and pour over potatoes. Stir in lightly and put in 2 qt. baking dish. Dot with 2 tablespoons butter. Bake at 350 degrees F for 40 minutes.
