Storing Fresh Apricots?

Bronze Feedback Medal for All Time! 102 Feedbacks

I was just given a large bag of fresh apricots. They are all slightly bruised. I need some really easy storing ideas? How to freeze, cook, etc. without ascorbic acid, as I am allergic to it! Thanks guys!

Do you have a dehydrator? My husband is a genius with this thing! If we have bananas that are too ripe our kids will not eat 'em, he slices them, dips them in lemon juice so they won't turn brown, and puts them in the dehydrator. After they have dried into banana chips.....well the kids can't get enough of them! LOL

i'd cut the apricots in half, remove the stone, dip 'em in lemon juice, or Fruit Fresh, and dry them. Or cut them in smaller pieces for Trail Mix. If you don't have a dehydrator, the old fashioned way to dry fruit is :

prepare the fruit, Place them on a white bed sheet outside in the sunshine. You'll need to turn 'em so they'll dry on both sides. Bring 'em inside in the late afternoon. Then put 'em back outside the next morning. Be choosy where you place your fruit. You don't want the neighbor dog to...well, you know. 'Round here there were porch roofs made of tin. So they would lay that bed sheet on the hot tin roof to dry their fruit. OR you could make Apricot Fruit Leather! Yum! The kids love this too, it's better than store bought fruit roll ups.
