Irish Creme Pie With Chocolate Crust

I love Dessert! I can not eat as much as I would like to but I have some great recipes. I guess I will share them because they are to good to be forgotten about! So here is one. It is delicious! First are instructions for the pat in pan pie crust. It is a chocolate pie crust, you can buy a ready made chocolate one, if in a hurry. But this crust is delicious and really helps to make the pie so good.

Chocolate Pat in Pan Pie Crust

Ingredients

  • 3/4 cup plus 2 Tbsp. flour
  • 1/2 cup butter or margarine. (I like Butter)
  • 1/4 cup powdered sugar
  • 2 Tbsp. baking cocoa

Directions

Mix ingredients in medium bowl. Press firmly and evenly against the bottom and side of a 9x11inch pie plate pie pan. Bake crust for 12-15 minutes or until golden brown and cool completely when done.

Irish Creme Pie

Ingredients

  • 1/2 cup milk
  • 32 large marshmallows
  • 1/3 cup Irish Cream Liqueur*
  • 11/2 cups heavy whipping cream
  • Grated chocolate, if desired
*Substitute 3 Tbsp. instant Irish style coffee mix (dry). Stir into melted marshmallow mixture until dissolved.

Directions

Heat milk and marshmallows in 3 quart saucepan over low heat, stirring constantly just until marshmallows are melted. Refrigerate about 20 minutes, stirring occasionally until mixture mounds. It will be like marshmallow in the jar when you put some on a spoon to check (maybe a little softer). If mixture becomes too thick, place pan in bowl of warm water. Stir mixture to proper consistency if this happens. Gradually stir in Liqueur.

Next, beat whipping cream in chilled bowl with electric mixture on high until soft peaks form. Fold marshmallow mixture into whipped cream. Spread in pie crust. Sprinkle with chocolate. Cover and refrigerate at least 4 hours until set, but no longer than 48 hours. Store covered in refrigerator.

And now you can set and enjoy it. Only make sure other people are there or you may be tempted to just keep on eating. Enjoy!
