Twice Baked Cheesy Mashed Potatoes

I love cheese and this recipe is an excellent use of leftover mashed potatoes, too :-)

Ingredients:

  • 1/2 cup chopped onion
  • 1 Tbsp. vegetable oil
  • 4 cups mashed potatoes (prepared with milk and butter)
  • 2 cups shredded Cheddar cheese, divided
  • 1/4 cup crumbled cooked bacon
  • Salt and pepper, to taste

Directions:

Saute chopped onion in oil until tender. Combine the sauteed onion, mashed potatoes, 1 cup cheese, bacon, salt and pepper in a large bowl. Spoon mixture into a baking dish and sprinkle with remaining cheese. Bake uncovered at 350 degrees F. for 20-25 minutes or until cheese is melted.
