Lemon Pudding Cake

Tasty, refreshing, moist cake.


  • 1/2 cup sugar
  • 3 Tbsp. all purpose flour
  • 1 tsp. finely shredded lemon peel
  • 3 Tbsp.lemon juice
  • 2 Tbsp. margarine, melted
  • 2 slightly beaten egg yolks
  • 1 cup milk
  • 2 egg whites


Combine sugar and flour. Stir in lemon peel, juice and melted margarine. Combine yolks and milk. Add to flour mixture, stir until combined. Beat egg whites until stiff peaks form. Gently fold egg whites into lemon batter.

Put batter in a 1 quart casserole. Place casserole dish in a larger pan and place in oven. Add 1 inch of hot water into larger pan. Bake in a 350 degree F oven about 40 minutes or until golden and top springs back. Serve warm.
