Toasted Spice Cake

Ingredients:

  • 1/2 cup shortening
  • 2 cup brown sugar
  • 2 eggs, separated
  • 2 1/2 cup cake flour
  • 1/2 tsp. salt
  • 1 tsp. soda
  • 1 tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • 1 tsp. cloves
  • 1 1/4 cup sour milk
  • 1 tsp. vanilla
Topping
  • 1 cup brown sugar
  • 1 cup coconut
  • 1/3 cup soft butter
  • 1 Tbsp. cream

Directions:

Cream shortening. Gradually add sugar. Beat until fluffy. Add egg yolks and beat again. Sift flour; measure and add salt, soda, baking powder and spices. Sift again. Add dry ingredients alternately with milk and flavoring. Beat thoroughly after each addition. Gently fold in stiffly beaten whites. Pour into a greased, flat pan, 8x12 inches. Bake at 350 degrees F. for 40 minutes.

When baked, spread on topping mixture and toast slightly under broiler, just until browned.
