Cream shortening. Gradually add sugar. Beat until fluffy. Add egg yolks and beat again. Sift flour; measure and add salt, soda, baking powder and spices. Sift again. Add dry ingredients alternately with milk and flavoring. Beat thoroughly after each addition. Gently fold in stiffly beaten whites. Pour into a greased, flat pan, 8x12 inches. Bake at 350 degrees F. for 40 minutes.
When baked, spread on topping mixture and toast slightly under broiler, just until browned.

This recipe has gone through many changes. I have changed the flour to Gluten/Wheat free as I have allergies. I have also omitted the eggs, sugar and butter to make it low fat and added more dates to make it moist.
