How do you prevent fudge from sugaring? What am I doing wrong?

When I took Home Ec. as a teenager (many moons ago) our teacher taught us never to stir the fudge. If the sugarry mixture gets up the sides of the pan, wipe it down with a wet pastry brush. Use a candy thermometer and when your fudge reaches the soft ball stage; remove from heat,cool and beat until creamy. Hope this helps you.

here's a really easy recipe for fudge------
3 cups chocolate chips
one can eagle brand milk
dash salt
1tsp vanilla
simmer milk toss in the other ingr. pour onto plate
enjoy-----
