Recipe: Light Carrot-Raisin Salad

Yield: 8 servings
Ingredients
- 3 cups coarsely shredded carrots
- 1 cup diced unpeeled Gala or Empire apples
- 1/2 cup thinly sliced celery
- 1/2 cup dark raisins
Dressing
- 1/2 cup nonfat or light mayonnaise
- 1/4 cup nonfat or light sour cream
- 1 tablespoon sugar substitute or sugar
Directions
Place carrots, apple, celery, and raisins in a medium bowl and toss to mix. Combine the dressing ingredients in a small bowl and stir to mix well. Add the dressing to the salad and toss to mix. Serve immediately or cover and refrigerate for several hours before serving.

Recipe: Carrot Raisin Salad

Ingredients
- 4 cups shredded carrots
- 3/4 - 1 1/2 cup raisins
- 1/4 cup salad dressing
- 2 Tbsp. sugar
- 2-3 Tbsp. milk
Directions
Place carrots and raisins in a bowl. Mix together salad dressing and sugar and enough milk to reach a salad dressing consistency. Pour over carrot mixture and toss to coat. Makes 8 servings.
