Cheese Soup (Microwave Recipe)

• 1/4 onion, shredded
• 2 potatoes, shredded
• 2 carrots, shredded
• 1 stalk celery, sliced thin
• 1 cup chicken broth
• Salt
• Pepper
• 1 lb. Velveeta cheese
• Half and Half

Directions

Combine first 5 ingredients and bring to a boil. Add salt and pepper and cheese. Add enough half and half to fill the crock pot. Simmer and serve.
