Black-Eyed Pea Dip
- 1 pkg. frozen black-eyed peas (10 oz)
- 1/4 cup salad oil or bacon drippings
- 1 Tbsp. finely grated onion
- salt and pepper
- 1 can tomatoes and green chilies (Rotel brand makes this)
Boil peas in salted water until tender; drain. Saute' onion in oil and add peas to mixture. Press peas to break skins and mix with seasonings. Add tomatoes and green chilies. Mash again and serve with corn chips or Doritos.
