Buy a large winter squash at the farmer's market or when on sale, cut in 1/2 and bake on cookie sheet in oven at 350 degrees F. until tender (about 1 hr.) Scrape out seeds, then soft cooked squash, put squash in mixing bowl. Add butter, brown sugar and salt and pepper to taste, mix, and serve hot. Freeze the excess in small freezer baggies (laid flat for easy freezer stacking). Easy and delicious future side dishes!
