Ingredients:

  • 2 cups cooked, diced chicken
  • 3 oz. cream cheese, softened
  • 3 Tbsp. margarine, melted
  • 1 Tbsp. chopped onion or chives
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 2 Tbsp. milk
  • 1 Tbsp. chopped pimento (opt.)
  • 1 pkg. refrigerated crescent rolls (8 count)
  • 3/4 cup crushed seasoned croutons

Directions:

Preheat oven to 350 degrees F. In a medium bowl, blend cream cheese with 2 tablespoons margarine. Add chicken, onion, salt, pepper, milk and pimento; mix well. Separate rolls into 4 squares, sealing the cut edges. Place 1/4 of the chicken mixture on each square. Pull the 4 corners of each square together at the center and twist to seal. Place on an ungreased baking sheet. Brush squares with remaining margarine and sprinkle croutons over all. Bake 20-25 minutes until golden brown.

I have been making Chicken Squares for many years. A dear friend made it for a dinner party and then shared the recipe. It is easy and looks so nice as tho you've gone to a lot of trouble. My recipe does not call for the pimiento but otherwise is the same. I always serve chicken gravy with it, mashed potatoes and a green vegetable. I like to make this dish when I have leftover cooked chicken.
