Applesauce Cake

Ingredients

• 3/4 cup shortening
• 1 1/2 cups sugar
• 1 egg
• 1 pkg. dry mincemeat (9 oz)
• 2 cups applesauce
• 2 cups flour
• 1 tsp. soda
• 1 tsp. cinnamon
• 1 tsp. nutmeg
• 1 tsp. allspice
• 1 cup chopped nuts

Directions

Cream shortening and sugar, add slightly beaten egg. Add mincemeat and applesauce. Blend in flour, soda, spices and nuts. Mix until smooth. Bake in greased floured bundt or angel food cake pan at 350 degrees F for 1 hour. Cool before removing from pan. If desired, ice with a butterscotch or plain glaze.
