Easy Tuscan Chicken with Olives and Peppers

I made this simple but delicious recipe in my crockpot but you may cook it in a large pot. A nice change of pace from boiled or baked chicken.




  1. In my slower cooker I combined the cut up pepper, banana pepper rings and garlic and put on the bottom of the pan.
  2. I added my clean and dry chicken pieces, poured in lemon juice and sprinkled on paprika.
  3. Cover and cook on low setting for about 6 hours.
  4. Lift chicken out and keep warm on serving dish while increasing pot to high and adding the cornstarch mixed with 2 tablespoons of cold water to the pot. Stir 2 to 3 minutes and wait about 10 minutes while it thickens a little.
  5. Season to taste with salt.
  6. Ad

  7. Serve chicken with the thickened sauce poured over it. Tasted great with the greens too! No salad dressing needed!
