Flaky Pastry and Cream Tower

If you look in the clearance sections of major grocery stores, you'll find they will place baked goods there for less than half price at the end of the day. Mine sells half a dozen large croissants for $2 after 5pm. They're great when toasted, but my secret trick is to roll them out, cut them into discs, and turn them into a flaky pastry dessert. This tower of delight tastes like the most elegant Palmier cookies layered with fresh fluffy whipped cream. You just would not guess these are old croissants. This is a crowd-pleasure, no doubt!

You will need a serrated knife, a rolling pin, and round pastry cutters to make this. If you're making your own whipped cream, have a beater handy. You could also use ready-made whipped cream.

Prep Time: 17 minutes

Cook Time: 8 minutes

Total Time: 25 minutes



  1. Preheat oven to 375 F. Slice the croissant in half with a serrated knife.
  2. Roll both halves of the croissant with your rolling pin so they are very flat and wide.
  3. Cut out discs from the croissant using your round pastry cutter. You can use one size, but I used three.
  4. Brush the croissant discs with melted butter.
  5. Transfer to a baking sheet. Sprinkle with sugar.
  6. Dust with cinnamon. Bake in preheated oven for about 8 minutes, until golden. Allow to cool down.
  7. Beat heavy whipping cream until soft peaks form, then add powdered sugar and beat until stiff.
  8. Place the largest disc on your serving plate, then top with some cream. Place another disc on top.
  9. Keep building until you get to the top. You can serve it immediately, your refrigerate it a bit first. Both are great.
