When you have leftover creamed potatoes, there are many ways to prepare them for another meal and this is one of them. Hot potato cakes fried in bacon drippings. Delicious!

Cook Time: approximately 15 minutes

Total Time: approximately 20 minutes

Yield: 3-6 servings


  • 2 cups chilled creamed potatoes
  • 1 Tbsp gluten free flour
  • 1 egg
  • bacon grease


  1. Mix flour with potatoes.
  2. Whisk egg.
  3. Stir egg into potato mixture.
  4. Ad

  5. Place bacon grease in frying pan. Heat enough to cover the bottom of the pan well.
  6. Remove excess.
  7. Ad

  8. Drop tablespoons of mixture into hot bacon drippings.
  9. Fry on medium heat until golden brown on each side.
  10. Ad

  11. Serve hot.

Mmmm looks good. Have to try this for my M-I-L. Shes celiac but vegetarian too so have to leave out the bacon grease. Maybe add some scallions or rosemary?

I usually add some chopped onion. A friend says she likes a dollop of applesauce over her tater cakes. Haven't tried it though.
