Heart and diabetic healthy entree easy to make and delicious to eat. Boneless/skinless chicken breasts with a yummy fruity slightly spicy salsa on top.

Ingredients:

  • 4 boneless skinless chicken breasts
  • 2-3 fresh pineapple slices
  • 1 cup cut up fresh strawberries
  • 1/2 cup finely chopped sweet onions
  • 1-2 tsp honey
  • 1/2 tsp lemon zest or california lemon peel
  • 1/8 tsp red pepper flakes
  • 1-2 tsp finely chopped fresh mint
  • 1/2 cup low sodium soy sauce
  • 2 cloves fresh (chopped) garlic

Steps:

If you do not have honey, you can use sugar or sugar substitute.

  1. Mix garlic with soy sauce and marinate the chicken breasts.
  2. While chicken is marinating, grill slices of pineapple for about 2 minutes on each side. This can be done on an outdoor grill. I have a cast iron grill that I can use on a burner or in the oven that I used to grill the chicken.
  3. When pineapple is done grilling let it cool for a few minutes. While that is cooling mix the remaining ingredients (strawberries, onions, mint, honey, red peppers and lemon peel or zest). Chop the pineapple and add that to this mixture.
  4. Remove chicken from the marinade and put on grill. Grill until cooked through.
  5. Put a chicken breast on a plate and spoon the salsa over it. Enjoy!

Delicious hot but also good served cold.

Add even more citrus flavors by making kabobs and skewering bite sized chicken pieces with pineapple chunks.

Ingredients:

  • 1/2 cup orange juice
  • 1/3 cup honey
  • 1/4 cup lemon juice
  • 1/4 cup soy sauce
  • 1/2 tsp. ground ginger
  • 2 tsp. minced garlic, or more to taste
  • salt and pepper, to taste
  • 2 lb. boneless skinless chicken breasts or thighs

Directions:

Whisk together orange juice, honey, lemon juice, soy sauce, ginger, salt, and pepper in a large glass bowl. Reserve and refrigerate 1/3 cup of the marinade in a separate covered container for basting. Place the chicken into the bowl, turn to coat, cover and refrigerate for at least 4 hours, turning once.

Preheat grill to medium and lightly oil the grill rack.

Grill chicken for 5 to 7 minutes on each side, basting often with the 1/3 cup of reserved marinade, and cook until juices run clear when pierced with a fork.

Tastes great and is easy, fast and cheap.

Total Time: 3o min

Yield: 4

Ingredients:

  • 4 boneless chicken beasts ($5.00)
  • 1 tomato, chopped ($0.30)
  • 1 cucumber, chopped ($0.20)
  • 1 onion, diced ($0.20)
  • 1 Tbsp lime juice ($0.10)
  • 1/2 tsp salt ($0.03)
  • 2 Tbsp cilantro, chopped ($0.10)

Steps:

  1. Heat grill over medium flame or coals.
  2. While it heats toss together tomato, cucumber, onion, cilantro, lime juice and salt.
  3. Ad

  4. Refridgerate for 30 minutes.
  5. Brush chicken breasts with oil and grill until no longer pink about 7-8 minutes.
  6. Drain salsa if needed and serve over chicken!

Ingredients:

  • 1 (16 oz.) can pineapple chunks
  • 6-8 boneless, skinless chicken breasts
  • 1/2 cup teriyaki sauce
  • 1 cup packed dark brown sugar

Directions:

Soak wooden skewers in water. Drain pineapple, reserving juice. Place chicken, reserved juice and remaining ingredients in 1 gallon plastic food bag, and seal. Shake gently to coat. Chill for 4 hours to overnight. Preheat grill. Remove chicken from bag with tongs, and place on hot grill. Grill for 10 minutes or until test done, turning after 5 minutes. Thread pineapple chunks on skewers, and place on outer edges of grill. Grill for 5 minutes on each side.
