Healthy Meatloaf

Silver Post Medal for All Time! 293 Posts

A row of baked meatloaves topped with tomato sauce. This is a healthy version of a classic comfort food. Made with ground turkey, this is full of mushrooms, onions and garlic. Pair it with some brown rice and you've got a tasty meal that will leave you feeling full and refreshed. Enjoy!

Total Time: About 30 minutes prep

Yield: 7 servings

Source: Modified from a recipe in the book "Clean Eating".

  1. Rough chop your mushrooms, onion and garlic. Place them in a food processor and run until you have a sort of sauce.
  2. Add your oats to your processor until they are powdered.
  3. Add your ingredients to a large bowl with your ground turkey, along with 3/4 cup of the pasta sauce, vinegar, Italian seasoning, salt and pepper.
  4. A bowl with ingredients for meatloaf.
  5. Mix well. A potato masher helps, but your hands are the best tool for the job.:)
  6. Mixing the meatloaf ingredients together.

  7. Form your mixture into 7 little loaves on your ungreased cookie sheet. Pour your remaining 1 1/4 cup sauce over the top. More are pictured here, that's because I doubled the recipe.
  8. Small meatloaves ready for baking.
  9. Bake at 375 degrees F for 30-40 minutes, or until cooked through. If your thermometer reads 165 F, they are ready.
  10. A tomato sauce covering the meatloaves.
  11. Serve with brown rice and enjoy!
  12. A meatloaf served with rice.
