Herb Quinoa with Tomatoes

This is a wonderful way to serve quinoa alongside fish. It goes well with any entree.

Cook Time: 15 minutes

Total Time: 25 minutes

Yield: 4 cups / 15 side servings

Ingredients:

Steps:

  1. Cook quinoa. Follow the instructions on the package.
  2. To make the herb vinaigrette, using a food processor, add parsley, basil, lemon zest, lemon juice, olive oil, thyme and dash of salt & pepper.
  3. Once quinoa is fully cooked, add to a large bowl. Toss with herb dressing just made and mix evenly.

  5. Top off with cherry tomatoes. Ready to eat immediately or chilled in the fridge. Good for the week to eat.
