This is a quick and easy way to make grilled oysters at home. This is a version that we eat in Japan. It's pretty simple but has some fantastic flavours. We even make this in the toaster oven with no adjustments to this recipe. Enjoy!
*If you don't have Mirin, you can substitute it by adding 1 or 2 tablespoons of sugar to 1/2 cup of white wine or sherry.
Total Time: 30 minutes
Ingredients:
- 6 oysters in shell
- 3 Tbsp Mirin
- 3 Tbsp white miso
- 3 Tbsp mayonnaise

Steps:
- Preheat oven to 400 F. Wash the oyster shells in cool water with a brush. Hold an oyster with a towel, flat side up. Insert your knife between shells to separate it. Use a twisting motion as you go along.

- Make sure to cut the muscle which is holding the shells closed. When you cut the muscle, the top shell can be removed very easily.

- Heat up the Mirin and miso in a small pan over medium to low heat. Pour into a bowl.

- Stir in the mayonnaise and mix well.

- Drizzle the sauce over the oyster meat in the shells and loosely cover with foil. Place in preheated oven and bake for 10 minutes, remove the foil, and bake 5 minutes longer. Serve immediately with lemon wedges.
