Juicy Pear Cake

This delicious cake is laced with the flavours and textures of perfectly ripe pears. You make the batter a bit on the thick side so the juices from the pears will run through to give it a perfect consistency when it's done baking. It smells heavenly, too. I hope you try this cake!

Cook Time: 40 minutes

Total Time: 1 hour

Yield: 9 servings

Supplies:

  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 2 eggs, beaten
  • 1/2 cup oil
  • 1 tsp vanilla
  • 2 cups flour
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 cup milk
  • 3 ripe pears

Steps:

  1. Preheat oven to 350F. Mix together sugars and eggs.
  2. Stir in oil and vanilla.
  3. Mix together flour, salt, and baking soda. Stir into wet ingredients.

  5. Fold in cinnamon. You want the batter to be a cross between a cookie batter and a cake batter. Because these batters can turn out so differently at this point, either stir in a bit more flour to thicken, or add milk a tablespoon at a time to thin out.
  6. Chop up pears. I like mine a medium-large dice.
  7. Fold pears into batter.
  8. Lightly grease a 9 x 9 in. baking dish (or similar) and pour in the batter. Bake for about 40 minutes, until cake is super golden.

  10. Allow to cool a bit and serve warm, if desired. You can also serve fully cooled. Goes great with cream or vanilla ice cream.
