Light and Fluffy Pineapple Dessert

When you taste this fluffy dessert, you will be amazed at the delightful flavor. It looks so rich, but is light and easy for after a dinner. It contains jello, whipped cream cheese, Cool Whip and pineapple. You will love how it looks and tastes.

  1. Spray oil in a 13 x 9 in. glass baking dish first.
  2. Mix the graham cracker crumbs, sugar and butter together in the pan. Then spread throughout the pan until you have a nice even bottom crust.
  3. In a bowl pour your 2 packages of Jello. Add the boiling water and stir well until jello is completely dissolved. Drain and squeeze out juice from pineapple. Add pineapple juice to Jello mix.
  4. Let jello mixture cool in freezer about 45 minutes.
  5. Soften cream cheese, and cream the cheese with an electric mixer.
  6. When the time is up, take the Jello out of the freezer. Add the Jello to the cream cheese, also add the drained out crushed pineapple. Using the mixer, whip it for just 30 seconds and return it to the freezer for 1 hour.
  7. After 1 hour, it will not be completely set. Beat this until it is fluffy or smooth. Pour this mix over the crust and place back into the freezer for about 1 hour.
  8. Remove the Cool Whip from the refrigerator. Remove the dish from the freezer. And spread a thick layer of Cool Whip over the layer of Jello and cream cheese mixture. Using all the Cool Whip.
  9. Refrigerate several hours or overnight before serving.
  10. Then garnish with rings of pineapple, placing a cherry in the middle of each ring. This cuts easily into large squares. Delicious and lovely looking!

What happens to the crushed pineapple after the juice is drained? In the instructions, I didn't see where it was used.

So very sorry, I don't know why Thrifty Fun didn't catch this error!
Step #6...When adding jello to creamed cream cheese also add the drained out crushed pineapple! All gets beat together and then put in the freezer again.

Thank you so very much for catching my mistake. I hope when you make it, you will come back and let me know how much you loved it!!! Enjoy! :)

We have fixed the original recipe to show the extra step. It's hard for us to notice missing ingredients sometimes so it is great if a careful reader can let us know if something seems off.
