Mini Meatloaves on plate with squashThese were delicious, and can be frozen to enjoy another day. We ate them for dinner, but these would be very portable and make a terrific lunch. Can be eaten hot, warm or cold.

Prep Time: 5 minutes

Cook Time: 18-20 minutes

Total Time: 23-25 minutes

Yield: 12 mini meatloaves; 6 servings

Steps:

  1. Preheat oven to 450 degrees F. Grease a 12-cup muffin tin.

  3. In a large bowl combine all the ingredients well.

  5. Divide the meat mixture into the 12 muffin tins.

  7. Brush the tops of the muffins with more barbecue sauce.
