Bacon Wrapped Mini Meatloaf Recipe

Mini Meat Loaf finished meatloafExceptionally quick to make and so tasty. Have 1-2 each for a lunchtime snack, or 3 or more for a main meal. Eat with a salad or make it into a roast dinner with potatoes, vegetables, gravy, and Yorkshire pudding.

Total Time: Half an hour

Yield: 6

Ingredients:

  • 250 g minced beef (8oz ground beef)
  • 6 rashers streaky bacon
  • seasoning
Mini Meat Loaf - hamburger meat
 
Mini Meat Loaf - spices for this recipe
 

Steps:

  1. Line 6 muffin tins with the streaky bacon.
  2. Mini Meat Loaf - bacon being added
     
  3. Mix your favourite herbs and spices into the beef.
  4. Mini Meat Loaf - mixing the meat
     
  5. Divide meat up into 6 and press into the tins.
  6. Mini Meat Loaf - putting meat inside of the bacon
     
  7. Bake in a medium oven for about 20 minutes to half an hour, or until the meat has shrunk and is cooked through.
  8. Mini Meat Loaf - cooked min meat loafs, still in the cupcake pan

  9. Serve.

You didn't say temperature setting and 20 minutes is not long enough to cook burger. Bacon won't be done all the way .

The general recipe is called meatloaf muffins, and I bake them at 375° F in my toaster oven, for ~30-35 minutes (using a 6 regular size muffin cup pan).

The author could have meant those tiny muffin cup pans though, and 20 minutes would be fine.
Bacon could maybe be pre-baked, with a dampish paper towel to keep it propped up, then remove towel and stuff? Sounds good, I'll comment again After I make it!
