Mexican Kidney Bean Sandwich Filling
Mashed kidney beans mixed with ketsup or tomato puree, and seasoned with cumin, paprika, and cayenne pepper makes for a delicious sandwich spread. Add lettuce and enjoy.

This is so tasty, filling, healthy, economical, quick and easy. I doubled the recipe so I would have enough for two sandwiches.

Total Time: 4 minutes, 30 seconds
Yield: 1 sandwich.
- 1/2 can kidney beans
- 1 Tbsp tomato puree (I used ketchup)
- 1/4 tsp cumin
- 1/4 tsp paprika
- cayenne pepper to taste
- salt & pepper to taste
- Rinse and drain the beans. Place the beans in a bowl and microwave on high for 30 seconds.
- Add the tomato puree or ketchup and mash with a fork until smooth but don't worry if there are a few lumps.
- Add the cumin and paprika and season with cayenne pepper, salt and pepper to taste.
- Spread on bread.
