Mexican Kidney Bean Sandwich Filling

This is so tasty, filling, healthy, economical, quick and easy. I doubled the recipe so I would have enough for two sandwiches.

Prep Time: 4 minutes

Cook Time: 30 seconds

Total Time: 4 minutes, 30 seconds

Yield: 1 sandwich.

Ingredients:

  • 1/2 can kidney beans
  • 1 Tbsp tomato puree (I used ketchup)
  • 1/4 tsp cumin
  • 1/4 tsp paprika
  • cayenne pepper to taste
  • salt & pepper to taste

Steps:

  1. Rinse and drain the beans. Place the beans in a bowl and microwave on high for 30 seconds.

  3. Add the tomato puree or ketchup and mash with a fork until smooth but don't worry if there are a few lumps.
  4. Add the cumin and paprika and season with cayenne pepper, salt and pepper to taste.
  5. Spread on bread.
