Moroccan Chicken and Bean Salad

I love this salad because it's bursting with flavours and colours! The textures are fantastic from the mix of the soft beans and the crunchy pomegranate seeds. This makes for a lovely side dish or full meal.

Ingredients:

Steps:

  1. In a bowl, mix together the garlic, salt, oil, lime juice, cumin and cinnamon. Add the kidney beans, chickpeas, and chicken. Allow to sit for 10 minutes.
  2. Transfer to a serving platter and top with pomegranate seeds, parsley and mint.
