Portobello Mushroom Personal PizzasThis is an amazingly delicious low-carb, keto-friendly pizza recipe that's really great for the whole family. I love making these with the kids in our family, and their parents love that they're getting loaded up with plenty of vegetables. No kneading of the dough or lengthy waits at the oven. You can even use a toaster oven. You'll love this healthy take on pizza!

Prep Time: 7 minutes

Cook Time: 8 minutes

Total Time: 15 minutes

Ingredients:

Portobello Mushroom Pizza ingredients
 

Steps:

  1. Heat up your broiler. I used my toaster oven broiler. Using a knife or spoon, scrape out the dark innards of the mushroom caps.
  2. clearing out gills on Portobello Mushroom
     
  3. Rub one tablespoon of olive oil between the two mushroom caps.
  4. adding olive oil to Portobello Mushroom
     
  5. Sprinkle with half the garlic salt pepper mix. Place under broiler for 4 minutes.
  6. adding herbs to Portobello Mushroom

  7. Flip over and add other tablespoon of oil. Sprinkle with the rest of the garlic salt pepper mix. Broil this side for another 2 minutes.

  9. Flip the caps over again and fill with tomato chunks.
  10. adding tomatoes to Portobello Mushroom
     
  11. Sprinkle tomato chunks with basil and oregano.

  13. Add salami or pepperoni.

  15. Finally, top with cheese.

  17. Place under broiler until cheese starts to brown, a couple minutes. Enjoy!

I heard about this style of pizza < limited to 3 ingredients -not counting the herbs/oil- > back in 2007, and it took me 4 months to find the original post in a backcountry journal for Russian hikers. It was out of the late 1970s. They had it set up as a miniature supreme.
