Asian Style Chicken And Cabbage Salad

Ingredients

  • 1 head of cabbage sliced thin
  • 1 whole chicken breast cooked and chopped
  • 2 package Ramen noodles, uncooked and broken fine (don't use seasoning packet)
  • 4 green onions
  • 1/4 cup chopped toasted almonds
  • 2 tsp. toasted sesame seeds
  • 1/2 cup vegetable oil
  • 1 tsp. sesame oil
  • 6 tsp. rice vinegar
  • 2 tsp. salt
  • 4 tsp. sugar
  • 1 tsp. pepper

Directions

Combine first six ingredients in a large bowl. Prepare dressing; combine the remaining six ingredients. Pour over salad and let sit overnight before serving.

Chicken Or Tofu Salad

This makes a lot, but it disappeared with just the 4 of us. Delish! I use my own spices and leave out the flavoring packet as it contains much too much salt.

Ingredients

  • 1/4 cup almonds, slivered
  • 3 Tbsp. sesame seeds (grind up 1 1/2 Tbsp. if possible, it brings out more flavor)
  • 1 package Top Ramen noodles

  • 2 Tbsp. soy sauce (lite-less salt)
  • 1/3 to 1/2 cup Wine
  • 1/4 tsp. Garlic powder
  • 1/4 tsp. Onion powder
  • 2 Tbsp. Splenda
  • 3 Tbsp. White vinegar
  • 1/4 cup oil (I used 1/8 cup sesame and 1/8 cup olive oil)
  • 4 scallions thinly sliced
  • 1 red bell pepper (Optional I didn't use it)
  • Cilantro, chopped (Optional I used dried cilantro 1/4 tsp.)
  • 1/2 head cabbage (I used about 3 lbs. of Chinese cabbage chopped fine)
  • 2 cup chicken breast, cooked and diced small (I used 2 cups tofu)

Directions

Toast almonds with sesame seeds and cool. Add cabbage. Break noodles into small pieces, add to almonds, sesame seeds, and cabbage and set aside. Blend together with a whisk: soy sauce, wine, garlic powder, onion powder, Splenda, vinegar, oil, scallions, pepper, cilantro. Add chicken to "wet" mixture. Let marinate if you have a mind to (it does enhance the flavor, especially of the Tofu). Pour over cabbage. I let it sit a few hours (refrigerated) to blend the flavors. It was delicious.

Patti's Fumi Salad (Japanese Cole Slaw)

My family loves this delicious Japanese coleslaw. I got the recipe off the Internet. This is a great Pot Luck dish. Delicious, inexpensive, feeds an army, easy to make. People always hunt me down for this recipe.

Ingredients

  • one head green cabbage
  • one head purple cabbage (OR 2 bags Dole "Classic Coleslaw" in place of cabbage heads)
  • garlic salt
  • toasted almond slivers
  • toasted sesame seeds (or sunflower seeds)
  • 6 scallions (or green onions)
  • 1/2 cup seasoned Rice Wine vinegar (I use a little more, about 3/4 cup)
  • 1/2 cup oil
  • 3 package Top Ramen Noodles not cooked, broken up (throw away seasoning packet)

Directions

Slice cabbage thinly, place in large bowl, toss with garlic salt. Add toasted nuts and seeds, scallions and broken up ramen noodles. Combine the oil and vinegar, mix together with the salad, chill and serve. Right before serving, I sprinkle the top of the salad with some more broken-up ramen noodles.

The recipe does not have to be chilled if you're in a hurry to get somewhere. The salad will compress nearly in half after the oil and vinegar has been added. This is a large recipe, alter the oil and vinegar to make smaller portions.

Asian Slaw

Ingredients

  • 1/4 cup sesame seeds
  • 1/3 cup sliced almonds
  • 1 head cabbage, shredded
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 cup snow peas
  • 6 green onions, thinly sliced
  • 2 (3 oz.) package Ramen noodles
  • 1/2 cup oil
  • 1/4 cup apple cider vinegar
  • 2 Tbsp. sugar
  • 1/4 tsp. pepper

Directions

Place sesame seeds and almonds on a microwave-safe plate and microwave on high until lightly toasted and you can smell them toasting, about 2-3 minutes, stirring frequently during cooking. Set aside. In a large bowl, combine cabbage, peppers, snow peas, and green onions. Crush ramen noodles and set aside. In a medium bowl, combine oil, water, vinegar, sugar, and 1 seasoning packet.

Discard remaining seasoning packet. Beat dressing with wire whisk until combined. Just before serving, toss crushed noodles, toasted almonds and sesame seeds with cabbage mixture. Pour dressing over salad and toss well. 10-12 servings

Chinese Cole Slaw

Ingredients

  • 1 lb cole slaw mix
  • 2 packages ramen noodles
  • 2 bunches green onions
  • 1 cup slivered onions
  • 1 cup sunflower seeds
Dressing:
  • 2 seasoning packets
  • 1 cup sugar
  • 1/3 cup vinegar
  • 3/4 cup oil

Directions

Mix and then pour over cabbage mixture. Let set overnight.

Chicken and Veggie Noodles

I like to take:

  • Chicken ramen noodles and spice packet
  • 1 - 1 1/2 cup water
  • small can mushrooms, drained
  • 1/2 - 3/4 cup frozen green peas
  • 1/2 - 1 cup leftover chicken, chopped or shredded

In medium saucepan add water and packet, bring to a boil and add broken noodles. Cook 1 to 1 1/2 minutes, then add vegetables. Continue cooking until noodles are done, adding chicken at the end of cooking time. Take off heat and let rest 5 minutes. Stir and serve.

I sometimes also add chopped onions. Just experiment with additions till you find what you like. I also like the sunflower or oriental slaw.

Spicy Shrimp and Noodle Soup

This soup is so good.

Ingredients

  • 1 lb shrimp
  • 1 Tbsp. lemon juice
  • 1/4 tsp. chili powder
  • 1/4 tsp. ground cumin
  • 1/8 tsp. black pepper
  • 5 cups water
  • 2 packages shrimp or oriental flavored Ramen Noodles (use only 1 packet of seasoning)
  • 2 cups salsa
  • 1 15oz can black beans rinsed and drained
  • 1 can corn, 1 green onion thinly sliced

Directions

Peel and devein shrimp, In a medium bowl combine lemon juice chili powder, cumin, and pepper, add mixture to shrimp toss to coat, let stand 20 minutes. In a large sauce pan bring water to boil, stir in ramen flavor packet, break ramen noodles into pieces add to saucepan, return to boil cook for 1 minute. Add shrimp, salsa, beans, corn, and green onion heat though until shrimp turn pink. Very quick, easy and good.

Beef Tomato Noodle Skillet

This is so easy and we eat it all of time.

Ingredients

  • 1 package of Ramen Noodles crunched up
  • 2 cans of tomatoes
  • 1 can of corn (not creamed)
  • 1 lb ground beef

Directions

Brown the beef and drain. Add the tomatoes, corn, and noodles. Make sure to add the seasoning package to the meal. Bring to boil. Cover, stirring occasionally. Continue cooking the meal until most of the tomato sauce is evaporated and the noodles are soft.

It makes a lot and is very yummy.

Chinese Fried Noodles

I use them to make Chinese fried noodles all the time. Simply presoak the noodles in hot water to cook them. Then heat about 1-2 Tbsp. of oil per package of noodles. Fry 1 clove of garlic, then toss in the noodles and stir fry them. Add about a half pack of the seasoning mix to the noodles, a Tbsp. of soy sauce, and if you like, some oyster sauce. If you overseason and it's too salty, just add some water and keep frying until the water evaporates. Once noodles are fried, I add frozen corn. You can also add other veggies, like bean sprouts, salter turnips (available at oriental stores), or shredded carrots. I then take out the noodles and fry a few eggs and cut them up into small chunks and then add the noodles back into the pan and mix them together. It tastes even better if you add fried onions (also available at oriental stores) over top as garnish.

It's a "very" inexpensive meal and great for parties because it is easy to fry 4-6 packets at a time.

Crockpot Beef And Noodles

I do a beef and noodles recipe with the ramen noodles. First I take a 2 to 3 lb. beef roast and cook it in the crockpot with around a cup of water. I use the low setting and I let it cook overnight. In the morning, I shred the meat up and I add anywhere from 6 to 10 seasoning packets from the beef ramen noodle packets. (It all depends on how many people are going to be eating this. I take it to potlucks a lot.) I also add around another 1/2 cup of water. I let this all cook together all day. About an hour before I am ready to eat, I cook all the ramen noodles (the 6 to 10 packs from which I took the seasoning packets.) I only add the noodles to the crockpot. I may add another 1/2 cup of water so the noodles don't dry up, but I mix together the noodles and beef and let them cook together for about 30 minutes so the flavor can really mix with the noodles. Everywhere I have taken this, it has been a huge hit.

Chicken Vegetable Soup

Use 2 packages of Ramen Noodles, add 1 can Veg-All mixed vegetables and 1 can white meat canned chicken. Boil noodles with water per instructions for 3 minutes, add seasoning packets, Veg-All and canned chicken. Season to taste with soy sauce (I use low-sodium), and simmer for 15-30 minutes.

More like a stew than a soup. You can also use canned tuna.

Corn Chowder

There is an easy to make corn chowder that uses the noodles. Take one package noodles and mix it with one package of a dry chicken soup mix (I used a Lipton cream of chicken). Then add about 2 - 3 cups milk/water mixture to it and throw it in the microwave for about 8 minutes. Be sure to mix the powder from the chicken soup into the water/milk mix so there are no lumps. Once the noodles are done, add one can of creamed corn. Mix and serve. My DH loved it. I suppose you could also add fried bacon pieces or sauteed onions to it if you wanted to.

Ramen Casserole

I make a hot dish with them. Put the water and season pack in a casserole dish and then I chop chicken or pork and put on top and bake until done about 1 hour at 350 degrees F. I have also left the chicken breasts or loin chops whole and put them on top of the noodles and baked them the same amount of time. One of our family's favorite meals with a salad.

When I'm really hungry, I eat them "raw" as a snack. Just break up the block by pounding on it with the heel of my hand while in the package. It's kinda bland, but I like it.

Hot Dog Ramen Soup

My 13 year old was making dinner for her sisters one night and I was not allowed into the kitchen. She was supposed to be making hot dogs and ramen soup. Well she threw together this dish and now it is a family favorite, very quick and all of us like it.

  • 1 package ramen for each person
  • 1/2 the amount of recommended water
  • 1 hot dog for each person (cut into chunks)

Bring all to a boil, turn off and add:

  • seasoning packet
  • 2 raw eggs (whisk in separate bowl)
  • 1/2 - 1 cup of cheese (we have used sliced and works great too)

Mix and let finish cooking.

Sounds and looks gross, but it really is the best tasting soup I think I have ever had, and I am not a hot dog eater.

Fast And Easy Alfredo

For a fast meal:

Make noodles as if you were making the soup, only drain noodles. Add:

  • a little garlic powder
  • 1 cup cottage cheese
  • 1 pat of butter
  • seasoning packet

Melt 1 oz mozzarella cheese, sprinkle with Parmesan cheese.

Mac N Cheesy Chicken Noodles

I like to cook up a box of Mac n Cheese and when the noodles are almost done, I add 1 crushed up pack of Ramen noodles then add the butter, milk, pepper, 2 slices American cheese, cheese packet and the Chicken seasoning packet. It turns out to taste like Cheesy Chicken Pasta. Very good. I also make some cheap garlic bread (microwave version) with McCormick's garlic and seasonings no salt version and butter with a sprinkle of Parmesan cheese on top to go along with it. I get about 4 meals out of this easy and cheap recipe.

White Chocolate Ramen Cookie

I found a great recipe for a drop cookie that uses ramen noodles. Take 3 packages of the noodles, break up into small pieces, discarding the flavor packets. Brown in a skillet with a couple Tbsp. of butter until lightly brown. Melt 1 regular size package of white chocolate chips in microwave or over double broiler. Mix the browned noodles into the melted chocolate. Drop by spoonfuls onto wax paper and let set for 20 minutes. Store in airtight container. Note: You can add anything from nuts to dried fruit to make it your own, but you'll find the noodles give off a nutty flavor on their own. My husband loves these and requests them often.

Clam Chowder and Ramen

Go to any store and buy a can of clam chowder. Cook your noodles either in the microwave (on high 3 minutes, 30 seconds on each side) or cook on stove. Then add the can of soup, the noodles will heat up the soup for you and it tastes great. I can never eat the whole thing, it fills me up so much.

I used to like buying the Sesame Chicken ramen packets. They would come with a little tube of sesame oil. Now I just add some toasted sesame oil to any flavor ramem. Also, my sister taught me to add lemon pepper and seasoning salt to ramen to give it more flavor.

Why make soup. Have you tried eating it dry as a snack? (Not bad actually.)

When making it as a soup, (most chicken kinds I like best) I just add chicken to the water as it boils. Extra protein and it is filling. I eat it all the time. My 2 year old son likes the noodles and sometimes eats the chicken pieces. Much better than some other junk.

I read your list of recipes for using ramen noodles, and I was quite
disturbed to see that more than one reader had suggested that we "throw out" the seasoning packet when preparing her recipe. I want to tell readers never, ever to throw them out.

Those packets can be used to season plain rice, used like bouillon to
make broth when you are sick, made into a broth with water and thickened with corn starch or flour to make a quick gravy or stew base for left over meat (match packet flavor to meat flavor), et cetera.

Please remind your readers that these are not just "seasoning packets,"
they are broth without water. They are even good to put into a disaster kit or to carry along when survival camping, because they only need water and the salt and fat in them can help to nourish someone (maybe even a pet) until help comes.

My fiance likes to add butter and milk to his ramen noodles.

I take ground beef and cook that with onion and bell pepper. I then cook the noodles and add them to the beef. Last I add the seasoning packet and some soy sauce. It is very tasty. Ground turkey works well with this, too. (01/29/2008)

Recipes That Use Ramen Noodles

My family likes to cook them with 1 3/4 c. of water and add the seasoning packet and noodles right before the water starts to boil. We watch the noodles cook until they are almost transparent and there isn't much liquid left (usually about 10 or 11 minutes). Then turn off heat and remove from burner and add a slice of either Velveeta or Kraft American cheese. Sometimes I like to add a slice of bologna or ham cut into pieces. So many variations and so very cheap. Costs about a quarter to feed one person with just the ramen noodles and a slice of cheese. Ya just can't beat that. (01/29/2008)

I make Ramen noodles with eggs. First you cook the ramen noodles according to the package directions. Then when it pliable enough to stir I drop one or two eggs in it, and by the time it is ready to serve the eggs that were mixed in with it are fully cooked. Recipes That Use Ramen Noodles

I call this recipe Ramen Chicken Parmesan.

You boil the water, cook the noodles, and add the seasoning packet as usual. You also cook a couple pieces of boneless, skinless, chicken breast on the stovetop.

Throw these pieces into a bowl with the Ramen. Use a spoon to pour some tomato sauce in the bowl. Sprinkle the desired amount of cheese (your choice of the kind) on top. Pop it in the microwave for a minute. This heats up the tomato sauce, and melts the cheese.
Then, enjoy.

I usually make the Creamy Chicken flavor, but you can use whichever one you want. (02/16/2008)

Recipes That Use Ramen Noodles

Easiest and Tastiest recipe with Ramen. Done in Less than 10 minutes.

  • 1 pkg ramen
  • 1 tbl oil
  • 1 tsp lime or lemon or vinegar
  • dash of black pepper or Tabasco sauce or chili pepper
Boil Water first.

Add Ramen and cook til all done (approximately under two minutes-noodles will look a little solid, don't worry the steam after straining noodles will continue to cook noodles. Do not overcook otherwise noodles will be soggy).

Strain noodles. Make sure to get all liquid out and use paper towel if needed to pat dry noodles. Place noodles on plate. Add oil, lime, pepper, and 1/2 seasoning packet to noodles. Give it a stir and enjoy.
(Side note: to make this into a bigger meal, add stir fried meat and vegetables) (03/16/2008)

We love to add the cooked, drained noodles to stir-fry cabbage. You can season however you like, using your own seasonings, some of the packet or all of it. This is great as a side dish. For a main dish we just add whatever meat we have like sausage, beef, or chicken and stir-fry it all together. It's so easy and fun just to experiment. (03/17/2008)

I take can veggies (corn, green beans, peas, carrots, etc.) cook them with Italian dressing. How much Italian dressing depends on how much veggies. I usually cook this about 30 minutes. Emily's Noodles

  • 1 pkg hot dogs chopped
  • 1 stick butter
  • 1 can mushrooms
  • 1/2 cup bacon bits
  • 1/4 cup chopped onion
  • 1/4 cup chopped green pepper
  • 6 eggs
  • 2 pkgs ramen noodles
Saute hot dogs, mushrooms, bacon bits, onions, and peppers in 1 tablespoon of butter and set aside.

In a second pan scramble the eggs, and set aside

In a third pan cook the noodles without the seasoning package, add seasoning package to hot dog mixture, once noodles are cooked and drained add remaining butter to the noodles, when butter is melted, combine all three pans into one large bowl.

Two boys from Korea came up with this recipe. It is my family's favorite. We usually triple the recipe. The leftovers are fought over, and are so good cold. (07/14/2008)

Recipes That Use Ramen Noodles

Chicken Noodle Casserole

  • 1 package of Chicken Ramen
  • 1 can chicken (your choice of size)
  • 1 can cream of chicken soup
  • 1 can mixed vegetables (I use Veg-all)
  • crushed saltines

Preheat oven to 350 degrees F.

Coarsely break up and cook the ramen without adding the seasoning packet, drain. Mix noodles, seasoning packet, canned chicken, soup, and vegetables together. Put into 8 x 8 baking dish. Cover top with crushed saltines. Bake for 20-30 minutes until crackers are slightly browned.

Recipes That Use Ramen Noodles

Cheap Ramen Salad.

You will need,1 packet of Ramen noodles, boiled in water. (No packet, unless you want the flavour.)

Drain noodles, and let them set for a bit.

Grab a bag of ready-made salad, the cheap store bought salad, with the carrots, and red cabbage. Put in to separate bowl and add Ranch dressing (or your favourite dressing), add a can of Starcrest Tuna, drained or even canned chicken, and/or shrimp.

Add a couple teaspoons of soy sauce into the dried noodles, so they could absorb flavour, and colour.

Mix both ingredients, and enjoy. Simple, delicious, and cheap. (09/25/2008)

Recipes That Use Ramen Noodles

Boil 2 pks chicken ramen noodles and 2 cups frozen broccoli. Drain about 95% of water. Put in casserole dish. Add about 1 tablespoon of butter and 1/2 cup of sour cream (sometimes I add Kroger brand french onion dip instead of sour cream). Sprinkle season packages over the top and mix up. Add chunks of Velveeta. Season with salt and pepper. Bake at 350 degrees for 15 minutes. Remove from oven and add crushed Ritz cracker crumbs. Recipes That Use Ramen Noodles

All of the recipes sound good. Two suggestions for flavor packets only. Do not throw out flavor packets, not thrifty. I use them when sick, take two cups of boiling water and add flavor packet. Sit back under a warm blanket and sip on it. My favorite flavor to use for this is the Oriental. Another suggestion is add to rice while being made in a rice cooker. (08/05/2009)
