Great as a salad, fun on a hot dog, with mustard or as a side dish to pork or any meat.
Blend oil, water, vinegar, and sugar. Arrange sauerkraut, peppers, and pimento in a bowl. Place onion rings on top. Pour dressing over.
Cover, refrigerate for several hours or overnight. Keeps for weeks.
