Let your slow cooker do the cooking for you! I didn't have boneless chicken thighs, so I used bone-in thighs with the skin pulled off.

- 20 oz boneless, skinless chicken thighs (1 used 5 bone-in chicken thighs)
- 2 (15 oz) cans diced tomatoes, undrained
- 1 Tbsp paprika
- 2 bell peppers, sliced
- 1 onion, sliced
- 4 cloves garlic, minced
- Put all ingredients into slow cooker.
- Mix well.
- Cook on low about 5 hours.
