Special Lentils in bowlYou get a lot of protein for the money in this recipe. I did not have frozen peas, so I used the frozen vegetables I did have. This is delicious and healthy. It makes a lot, and freezes well. I made brown rice to go with it.

Cook Time: 25 minutes

Total Time: 1 hour and 20 minutes

Yield: 14 1/2-cup servings

  1. Boil a large pot of water. Put the lentils in. Boil for 2 minutes, stirring frequently.

  3. Turn off the burner, cover the pot and let the lentils sit for an hour.
  4. Drain and rinse the lentils.

  6. In the pot used to boil the lentils, sauté the garlic and the onion.
