Vegetarian Quinoa and Bean Chili

I love crockpot dinners. Quinoa and Bean chili is a great one. Just put a little cheddar cheese over the top and serve with tortilla chips. I put in the seeds from half of the jalapeno for more kick (and it definitely had a kick!)

Total Time: 8-10 hours Crock-pot

Yield: 6-8

Ingredients:

Steps:

  1. Add all ingredients to slow cooker.
  2. Cover and cook 8-10 hours on low (or 4-5 hours on high).
  3. Remove bay leaf and stir well before serving
